A highly fragrant herb of the Parsley family. It is the seeds that are commonly known as Coriander. The seeds are commonly used to flavor food especially known in Indian cuisine. It’s leaves are commonly known as Cilantro and are used in flavoring food, especially in Central and South American cuisines. It is one of the oldest known herbs. Honey bees are attracted to the flowers. Seed heads ripen mid-summer and have a pleasant citrus like fragrance making them good for use in potpourris. Whole ground seed is used in chili sauces, salad dressing, guacamole, and cheese and blend well with onion and potatoes. The leaves often referred to as Cilantro have a very different flavor than the seeds. The taste is similar to parsley with a touch of citrus. The leaves can be used raw in salads, sandwiches, salsas, and salad dressing, or cooked in items like curry and bread. The seeds, leaves, and roots of Coriander are all used in cooking curries, salsas, and garnishes.
Sowing: Direct sow 1/2 inch deep in the spring after last frost, in a sheltered location, in full sun in well drained soil. Keep moist during germination period. Can also be grown in containers but provide sufficient drain aiding material in the bottom of the container. Coriander is sensitive to transplanting and the shock can cause it to bolt. Therefore it is advisable to sow the seeds direct. Can also be grown indoors.

Care information: Water regularly, do not over water. Harvesting fresh leaves, cut small immature leaves for the best flavor. Harvest mature leaves to encourage further growth. Leaves can be frozen. Harvest coriander as soon as the leaves and flowers turn brown before the seeds start to scatter. Harvest by cutting the whole plant and hanging to dry. Seeds should be dried then stored in sealed containers.
